Shrimp Scampi Pizza

 

Shrimp scampi is pretty delicious. Tom and I both really like shrimp, and we used to have it more often, but we haven't had it for a while. So, I decided that we needed to have pizza with shrimp! I have made a pizza similar to this before. This turned out really good though.

I started with the thin-crust dough recipe that I seem to be using all the time now. 6T. water, 1/2 tsp. yeast, 1 c. flour, 1/4 tsp. salt. It really does make a great thin crust.

I made chicken alfredo a couple nights ago and saved about 1/2 c. of the alfredo sauce from that, but the recipe I use is 1 stick of butter, 8 oz. cream cheese, some garlic, 1 c.? milk, and 1/3 c. shredded Parmesan, and some parsley. Apparently, my sauce got chunky after refrigerating it after cooking it. It still turned out good though. So, I spread that around on my crust.


Added some Mozzarella cheese and "Pizza" cheese (a blend of Mozzarella, Parmesan, and some others)

 

 
 I layed the shrimp on top. and then baked at 475 for 10 minutes.
 
 
While this was going, I melted some butter with some minced garlic.

I brushed on the garlic butter after it cooled for a little bit.

I had some salad and garlic bread with my pizza. Pretty.
 



 
We both really liked it. I may use a different alfredo sauce when I make it again though. It was a little too cream cheese-y for me. Tom said I "nailed it" though.

Southwest BBQ Burger Pizza


 
After taking a break from pizza making last week due to our crazy schedules and never being home at the same time, I decided to make another kind of pizza. I decided to test out a Southwest style burger (you know, the ones with BBQ sauce and onion rings on them) as a pizza. I wanted it to have ranch and BBQ for the sauce, but we didn't have any Ranch dressing and I was too lazy to make some, so I just used Ranch seasoning spices.
 
First, I sliced some ground beef off of a chunk that I had just bought, and added some Lawry's seasoning salt, then seared both sides. (I think it would make a better pizza if it was cooked less I have decided)
 

For the crust, I wanted a thicker crust, and used a basic yeast pizza dough recipe.

 
My little "helper" was here too....she loves to pick at the dough and eat it. Added the Ranch seasonings (Parsley, garlic, onion powder, dill, pepper, salt)

Then, this is where I should have done it differently. I baked the pizza without the onion strings on it, but I think it would go together better if they are added before baking the pizza. So, here are the onions soaking in the milk. After this, I coated them with flour, salt, pepper, and a little cayenne pepper. Then, fried them in hot oil.

 
It got a little more done than I would have liked....

 
And we STILL need to get a different pizza pan. Topped with the onion strings (Again, you should add them before cooking.....these just fell right off the pizza. I don't think they would get too burnt if added before cooking. But if you are scared, add them midway through baking the pizza.)



 
Mmm....It was pretty good. Just needed Ranch dressing instead of seasoning, meat added before it is fully cooked, and onion strings added sooner to be in the cheese. It came together pretty well though.

Abbott is 4 months old!




This was supposed to be posted yesterday, but I drove around all morning, and worked all afternoon/evening, then when I got home, the internet wasn't working, so I guess today will have to work.

Abbott is 4 months old! I can't believe how fast the time is going. He is also getting so big. I unofficially weighed him today and he is 17.2 pounds and 26.5 inches long. I compared it with Elsie's measurements, and he weighs about 1 lb more, and is the same length. The kids are going to start going to a home daycare, and she has an almost 4 months old who is tiny compared to him, it makes me think he's extremely large, probably 80-90 percentiles. I think that's what Elsie was at this age anyways.

It's so neat to see him discover everything around him. He's getting pretty good at grabbing things in front of him, rolling from back to tummy, "talking", and he loves to smile! He also loves his bathtime! He's awesome at riding in the car, he hardly ever cries when we go places.

He's really a very happy baby. He gets crabby sometimes for Tom while I am at work, but I think he's just hungry and tired and wants mom :) I like to think that anyways. I think his little ears stick out more and more every day :) I just love the little guy!

BBQ Chicken Bacon Ranch Pizza


Time for another pizza! This is one we have frequently....it's so good! It's pretty easy, so I'll just use a lot of pictures. I added tomatoes and don't usually. I haven't decided if I like it better with or without yet.

I used the same thin crust dough recipe I used last week, but this time, it seemed to not roll out as easily and it was less dough-y and more pie crust-y. I'm not entirely sure why. But it still worked.

Mix up the crust and press onto the pan.



Add a swirl of BBQ sauce (I like to use Sweet Baby Ray's original) and a swirl of ranch. Gather your toppings.

 


Add some cut up cooked chicken

And some tomatoes


Then some Mozzarella cheese, and I used some shredded Parmesan too because we didn't have a lot of Mozzarella left.



Bake for about 9-10 on 475.

Chicken Wonton Taco Pizza


We love chicken wonton tacos. Even Tom, who hates coleslaw (or so he thinks...) has said he really likes the slaw on top of them. And they are just Asian-y and crunchy and the flavors go well together. They are delicious. So, I thought I would try to make them into a pizza! And it was definitely successful. You can do this the easy way and buy sauces that you need at the store. We didn't have any of these sauces, and I had ingredients to make them, so I did this the more time-consuming way....this was made possible by Elsie going to Tom's cousin's house to play with her little girls for the night. We'll probably go out to eat later tonight, since tomorrow is our 5 year anniversary!

To start, you should mix up all of your sauces. You'll need some coleslaw sauce, Asian Sesame Vinaigrette Dressing, and Sweet and Sour sauce. Ok. It doesn't sound like that many sauces, but it takes time to make them all, mostly the sweet and sour sauce, so if you only buy one, I'd buy that one.

You can also buy little bags of crispy wonton strips for salad toppings. We had some fresh wonton wrappers, so I just cut them in strips and fried them, which also took some time.

I cut up 1 chicken breast and cooked it in some olive oil on the stove. I usually sear one side, then flip and cover, and the chicken keeps all of its juices.




Now, for the crust, I decided that thin crust would best to give it a little crunch, and a bready crust just did not sound good to go with chicken wonton ingredients. So, I found a recipe online, and it turned out really great, and it was very easy!

Yeast and warm water

Add flour and salt

Stir it all up, and knead for a few minutes

Press onto the pan....I put a little olive oil on the pan first so it wouldn't stick

Mix up 1/4 c. stir-fry sauce, 1/4 c. Asian sesame vinaigrette dressing, 2 T. soy sauce, 2 T. teriyaki sauce, and add the chicken. I cooked this a little on the stove before adding it to the pizza. It was also a little too sauce-y, so I drizzle some sauce on first, then spooned out the chicken onto the crust.

Then the crushed, fried wonton strips

 
 
I baked it at 500° for about 9 minutes. While it was baking, I got the topping ingredients ready. Mixed 1/4 c. coleslaw dressing and 2 T. Asian sesame vinaigrette dressing and added it to about 1 1/2 c. shredded cabbage. I also chopped up 2 green onion tops (but this was way too much....you just need about 1/2 of a green onion top), and some chopped cilantro.
 

Pizza is done! I cooled it on a cooling rack, mainly so I didn't have to look at it on this junky pizza pan.
 
 
Add the coleslaw, green onions, and cilantro
 


Then cut it up and enjoy!
 


We both really liked this. Tom really, really, really liked it. It captured all that we like about chicken wonton tacos and pizza into one. I will definitely make it again sometime.

Here are the recipes for components I used for this pizza:

Coleslaw dressing (makes about 1/4 c.....I used just this much for 1 pizza)
1 tsp. milk
2 tsp. sugar
5 tsp. Miracle Whip

Mix it all up in a bowl. Super easy.

Asian Sesame Vinaigrette Dressing

3 T. rice vinegar
1 T. soy sauce
1 T. sesame oil
2 T. toasted sesame seeds (my little jar was almost gone, so I only had about 1/2 tsp.
1 T. vegetable oil
1/3 c. water
Combine all ingredients

Stir-Fry Sauce
1 T. cornstarch
1-1/2 T. brown sugar
1/4 c. corn syrup
1/4 c. soy sauce
1 T. rice vinegar
1-1/2 tsp sesame oil
1-1/2 tsp fresh ginger
1 tsp. minced garlic
A shake of crushed red pepper
 
Combine all ingredients and heat in a sauce pan until bubbly and thickened.
 
Thin pizza crust (1 crust)
6 T. warm water
1/2 tsp. yeast
1 c. flour
1/4 tsp. salt
 
Add yeast to warm water. Stir until dissolved. Add the flour and salt, and knead for about 5 minutes. Press flat on a pan and bake 8-9 minutes at 500°
 
Wonton Chicken Mixture
1 cut-up or shredded cooked chicken breast
1/4 c. stir-fry sauce
1/4 c. Asian Sesame Vinaigrette dressing
2 T. soy sauce
2 T. teriyaki sauce
Combine ingredients and heat in a saucepan.
