Baked Zucchini Slices
Zucchini day 3. Baked zucchini slices with chipotle dipping sauce. We needed a side dish, and I have made something similar with potatoes, so I tried it with zucchini! We all thought they turned out pretty tasty too. Sorry for the lack of in the process pictures, I seem to have not taken any.
To make these, I sliced zucchini in about 1/4 inch slices. Then I mixed some parmesan cheese, garlic powder, onion salt, and pepper in a bag. Added the sliced and coated them, then placed on a cookie sheet that was greased with olive oil. Then baked them and.....yum.
Here's the recipe:
Zucchini slices
1 small zucchini
1/2 c. Parmesan cheese (the finely grated stuff in the plastic container that somehow doesn't need refrigerated before buying it)
1 tsp. garlic powder
1/2 tsp. onion salt (or you can use onion powder and add salt if you wish, we are out of onion powder.)
1/4 tsp. pepper
Slice the zucchini in 1/4 inch slices. Combine coating ingredients in a bag. Add slices and coat them evenly. Grease a cookie sheet, and lay slices flat in a single layer. Bake for about 25 minutes at 400°, turning after about 15 minutes.
(The slices stuck to the pan even with greasing it. They would maybe cook better if cooked on a grate so they wouldn't need flipped.)
Chipotle dipping sauce
1 chipotle pepper (the one in adobo sauce from a can)
1/4 c. mayo
1/4 c. sour cream
1/4 tsp. garlic powder
Combine all ingredients in a blender or food processor, and blend until it's the consistency you like.
